 2 lbs Ferndale Ground Turkey Breast
 3 Medium Sweet Potatoes
 1 Yellow Onion, diced
 1 jar Henrietta's Sloppy Joe Sauce
 1 cup Cottage Cheese
 Dill Pickles, sliced
 Olive Oil
 Salt and Pepper

Preheat the oven to 425 degrees.

Wash and dice sweet potatoes into cubes. Toss with oil and a pinch of salt.

Spread evenly on a baking sheet in a single layer. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.

Heat a large skillet over medium heat. Add a small amount of oil.

Sauté diced onion for 4-5 minutes, until soft and translucent.

Add ground turkey to the skillet. Break it up with a spoon and cook 6-8 minutes until browned and fully cooked. Season with salt and pepper.

Reduce heat to medium-low. Stir in sloppy joe sauce. Simmer for 6-10 minutes until heat through and slightly thickened.

Layer each bowl with roasted sweet potatoes, sloppy joe meat mixture, cottage cheese, and top with pickles.
